The craftsmanship and stories behind CHANEL’s scents
They say imitation is the sincerest form of flattery — something Mademoiselle Chanel must have often experienced. As an innovator of her time, many tried to emulate her work. Whether it’s through style, sensibility, or scent, her influence remains strong; she reshaped the idea of luxury and feminine identity, and today her elusively dynamic nature is reflected everywhere, yet somehow remains just out of reach. One of her creations, born in 1921, still smells exquisite, is elusive like its founder, yet it somehow feels fresh and contemporary more than a century later.

From Idea to Icon
One summer’s day on the French Riviera in 1921, Gabrielle Chanel had an idea that would change the conversation around the house’s identity. Always one to defy convention and inspired by her surroundings, she shared her idea for creating a perfume with Grand Duke Dimitri of Russia and her friends in the art world. Among those listening were Ernest Beaux, former perfumer to the court of the Tsar. At his laboratory in Cannes-la-Bocca near Grasse, Mademoiselle Chanel described her proposed scent as ‘A woman’s perfume with the scent of a woman’.
This project was unusual for the time, as the worlds of couturiers and perfumers rarely intersected. Rather than being discouraged, Gabrielle felt inspired to continue, reflecting her tendency not to adhere to rules.
In his lab, among flasks and stills, the experiments began. Ernest’s fifth attempt caught Gabrielle’s attention. He blended jasmine with aldehydes, creating a distinctive yet elusive scent with no dominant note. The name reflected the house’s dynamism. To choose a number rather than a name was as fresh as the scent itself. And so, N°5 was born. Five meant many things: Gabrielle’s astrological sign; it held universal recognition, and in its simplicity and symbolism it became the house's lucky number. The bottle was shaped to embody her philosophy, elegance and understatement echoing power, always recognisable and timeless.
And this bold embodiment of CHANEL’s philosophy became notorious not only for its fresh take on perfumery, but it also gained status as a coveted scent. Upon the liberation of Paris, soldiers chose N°5 as their gift of choice for long-distance lovers. As if they had not waited long enough to return home, it seemed one last wait was worth it as they queued to purchase a cherished bottle outside CHANEL’s boutique on Rue Cambon. They were not alone in their admiration; Marylin wore nothing but N°5 ; Warhol painted it; MoMA added the scent to its permanent collection in 1959, and so, what started as an idea in the lush surrounds of Grasse, became an icon.

Scent of a CHANEL woman
Perhaps it is the scent’s indefinable aspect that gives it its power; Grasse Jasmine, cultivated on the foothills of the Estérel, an extrait that takes on expression from its surroundings, a little like the CHANEL woman, whose expression is dynamic yet with her own signature. May Rose - blooms only once a year, for barely three weeks in the month of May, picked before the sun rises and scorches it’s petals, it adds notes of femininity, balanced by the orchid-like petals of ylang-ylang picked in the morning heat miles away on the islands of the Indian Ocean. At its base the woody warmth of sandalwood, the smooth scent of Bourbon vetiver and the sweetness of vanilla are at once tempered and enhanced by aldehydes that give N°5 that airy signature that endures across decades. However, it was not only the fields of Grasse that inspired its fresh approach and scent, but nature far further to the north, beyond the Arctic Circle, where the subtle aromas of dark liquid lakes rippling beneath the midnight sun served as a wellspring itself for Ernest Beaux. These notes would inspire a fragrance lexicon, unspoken before, that would set N°5 apart.
Where Heritage meets Modernity
What underpins this exceptional scent is a commitment to preserve heritage techniques and craftsmanship. That begins with the team at Grasse, whose expertise is something to be treasured in itself. In 1987, CHANEL signed an exclusive agreement with the Mul family, five generations of growers established in Pégomas in the Siagne valley, to safeguard this legacy and ensure the highest quality. Establishing a factory in the heart of the valley (the only one in the industry located there) gave the best chance of preserving every flower’s delicate scent. To this day, in the early morning on the first days of spring, you’ll find pickers delicately tracing the steps of their ancestors across the fields, gently harvesting petals that, within an hour, are placed in vats to preserve and celebrate their elegant scent.
One bottle of N°5 contains up to 1,000 Grasse jasmine flowers. The jasmine flowers in CHANEL’s fields are used exclusively for N°5 Extrait, the ultimate luxury when considering, too, that N°5 Extrait is one of the last great perfumes crafted entirely by hand. Baudruchage is perhaps the most precious of the scent’s heritage techniques, where a fine membrane is delicately wrapped around the neck of the bottle, rendering it airtight, a skill passed down through generations that requires utmost dexterity and attention to detail. Both reflect the house's values of quality and elegance, while preserving the delicate, distinctive aroma of N°5.

Those who appreciate this perfume’s complex composition also know its application needs precision. Dot it delicately on pulse points. This allows the scent to gradually reveal itself - distinctive and different for every wearer. In a world that moves at an ever-faster pace, these rituals and time-honoured techniques celebrate what it means to be patient, to be human, and to create something of quality that retains a sense of timelessness, without pressure to change.

Les Extraits de CHANEL - treasured expressions
Les Extraits de CHANEL exemplify the house's exacting standards, where every ingredient is considered. To cut through the Baudruchage on each extrait is to experience fragrance in its highest expression. Only a handful of women know the secrets of the seal, a craftsmanship treasure in itself that must be protected. The antidote to industrialisation. Topped with an emerald-cut stopper, its crisp, geometric facets catching the light, as rare and exquisite as the treasure it holds within. These are the quietly confident scents, created through a bold process, offering a denser, longer-lasting, more personal form of fragrance. 11 interpretations, in the purest form. And limited access to these rare techniques and ingredients only adds to their allure.
Scent as Freedom
Les Extraits de CHANEL are often experienced at home: a drop on a pulse point reveals itself through the body’s warmth. The scent is lasting and distinctive. Today, CHANEL changes the narrative again. They offer a refillable purse-sized spray, 'Extrait to Wear', making these precious scents travel-friendly. This echoes Gabrielle's independent spirit. The purse spray suits the dynamic, modern CHANEL woman as it remains rooted in quality craftsmanship and arrives in an iconic box resembling the emerald cut stopper, decorated in distinctive monochrome, before you stop to spray, it warrants a pause to admire its design alone.

1957 - an inspiring year
The latest fragrance to join the Les Extrait de CHANEL family is shaped by a story central to the house. 1957 was a peak year for Gabrielle Chanel following a couture collection that divided her French audience three years earlier. America embraced her, understood her language and her clothes, allowing them to move unhindered by structured tailoring and thereby enabling Mademoiselle Chanel to redefine modern elegance. In January 1957, at the Neiman Marcus Award ceremony in Dallas, she was awarded the title of the most influential fashion designer of the 20th century, sealing the bond between The States and Europe. The name is again infused with significant numbers; 19, the date of Gabrielle’s birth and 57, an ode to Manhattan’s 57th Street, where her largest boutique sat in New York's epicentre. CHANEL In-House Perfumer Creator Olivier Polge captures the essence of this transatlantic bond in the scent, with notes of white musk tempered by the floral nuances of orange blossom and iris pallida, while Neroli adds freshness, and Maré sandalwood and vetiver reveal themselves over time, adding that rich longevity to this exquisite new fragrance.

LES EXCLUSIFS DE CHANEL - scents steeped in stories
LES EXCLUSIFS DE CHANEL take scent into a different form of expression: Nineteen identical bottles: the same shape, the same purity, the same white label, yet each an olfactory expression echoing stories of Gabrielle herself. Rooted in memories, in places and in relationships, to open a bottle is to retrace her journey. A ‘living collection’ as layered as its founder, as enduring as her fashion. Born in 2007, with four signature scents: N°22, GARDÉNIA, CUIR DE RUSSIE, and BOIS DES ILES, first created in the 1920s with Ernest Beaux, their scents endure beyond trends and are available exclusively in CHANEL stores. Today, the collection comprises 19 scents with the same bottle, label and shape, that allow the fragrance to take centre stage.
Sitting at Harrods Perfume Salon, 5'ELEVEN" was offered the exclusive experience to join The Grand Parfumeur Masterclass, to hear the stories and symbolism behind these inimitable scents, to pause, to experience their fragrance, and let our senses wander, and, with closed eyes, reimagine Mademoiselle’s world. A favourite was LES EXCLUSIFS DE CHANEL GARDÉNIA, created in 1925, which captures not the fragrance of Gabrielle’s favourite flower, the camellia, whose white flowers exude no scent, but its sensibility. At its heart, its soft powdery florals reveal a quiet sensuality, evoking the unfurling of petals, a purity and a power so representative of Mademoiselle Chanel. While COROMANDEL takes its name from the Chinese screens so dear to her, LE LION DE CHANEL, Chanel’s totem animal, captures its spirit through Labdanum and patchouli, while its amber, woody, and leathery notes add texture, freshened by the crispness of bergamot and lemon, softened by sweet vanilla notes.

Again, craftsmanship sits at the heart of LES EXCLUSIFS DE CHANEL; they are rare, crafted with care by using specific extractions and techniques that draw the best from the raw materials. Whether from harvest to bottle, picked in the morning rays, or Iris pallida whose rhizomes must remain underground for three years before harvest, what sets apart Les Extraits de CHANEL and LES EXCLUSIFS DE CHANEL is the delicate precision, refined techniques and cherished knowledge, passed down, that render the scents loved by all who have the luxury to wear them.
Most creations within the LES EXCLUSIFS DE CHANEL collection are now also available as Extraits, their most precious form. To own a bottle is to experience the house's stories through the senses.
Freshness as a Form of Reinvention
The essence of CHANEL’s timeless power is not just the indefinable scents themselves, but what they represent: an aroma that at once moves through the air and through time, yet never fully belongs to any moment. These scents are built on the notion that true modernity lies not in constant change, but in the ability to remain relevant without altering one's essence. Through the clever use of aldehydes, the attention to detail given during harvesting, their abstract structure and distance from floral conventions, N°5 Extrait, Les Extraits de CHANEL and LES EXCLUSIFS DE CHANEL, like their owner, have confidence in their own identities. They are just like that little black dress, modernism translated, this time not through colour but through fragrance. To appreciate them is to understand that craftsmanship is not just about heritage but about modernist reinvention; it allows an idea to outlive its era, an idea that began in Grasse but became a cultural icon. Many will attempt to find those special ingredients, to study their ratios, but to really appreciate CHANEL perfumes is to understand that, while the scents themselves are exquisite and suspended in those distinctive bottles, they are more than the iconic architecture built to contain them; it is their embodiment of empowerment, evocation of femininity and modernity that is hard to capture.
To appreciate N°5 Extrait, LES EXCLUSIFS DE CHANEL and their extraits, is without question a pleasure; to emulate is understandable; to imitate is impossible, eau indeed!
